Cooking steps:
1. Chinese Iron rod yam 200g, 2 tomatoes, ketchup, a little salt, a little sugar, garlic, spring onion. Peeled yam, cut into small pieces after washing. Chopped garlic and spring onion.
2. Cross the top of the tomato with a knife, soak it in boiling water for a while, then you can easily peel the tomato skin and cut it into small pieces for later use.
3. Without putting oil in the pan, pour the sliced tomatoes and stir-fry over medium heat until the tomatoes are soft and rotten out of the soup. Then add the minced garlic and stir-fry for a while.
4. Add the right amount of water to boil, then add the yam section, add 2 teaspoons of ketchup, a little sugar, and use a low fire to cook the yam soft (about 20 minutes).
5. Finally, add an appropriate amount of salt, stir and sprinkle with spring onions.
Tips:
1. The yam must choose the thin iron yam, the taste is powdery and glutinous, and the thick one is crispy yam, which is more suitable for frying.
2. Add a little tomato sauce to make the soup thicker.
