Ingredients

  • 200 g Iron Bar Yam
  • 2 tomatoes
  • 2 tsp ketchup
  • 3 tsp Sugar
  • 3 cloves garlic, minced
  • 2 spring onion

Instructions

  • Peeled yam, cut into small pieces after washing. Chopped garlic and spring onion.
  • Cross the top of the tomato with a knife, soak it in boiling water for a while, then you can easily peel the tomato skin and cut it into small pieces for later use.
  • Without putting oil in the pan, pour the sliced tomatoes and stir-fry over medium heat until the tomatoes are soft and rotten out of the soup. Then add the minced garlic and stir-fry for a while.
  • Add the right amount of water to boil, then add the yam section, add 2 teaspoons of ketchup, a little sugar, and use a low fire to cook the yam soft (about 20 minutes).
  • Finally, add an appropriate amount of salt, stir and sprinkle with spring onions.

Notes

  1. The yam must choose the thin iron yam, the taste is powdery and glutinous, and the thick one is crispy yam, which is more suitable for frying.
  2. Add a little tomato sauce to make the soup thicker.
