250g pork belly
4 garlic scapes
A few slices of ginger
2 TBSP Pixian broad bean paste
½ TBSP cooking wine
1 TSP sugar
1 TBSP light soy sauce
Instructions
Cut the skin from pork belly and slice it thinly.
Cut the garlic scapes into sections.
Heat a wok and add a little oil. Pour in the pork belly and stir-fry until it turns brown and set side.
Leave a little oil in the bottom of the pan and add the ginger slices.
Add Pixian broad bean paste and fry until it turns into red oil.
Pour the fried pork belly and stir-fry quickly.
Add garlic scapes, sugar, cooking wine and light soy sauce. Garlic scapes can not be stir-fried for too long, or it will be hard to chew.
