  • a handful of spinach

Instructions

  • Once the water's boiling, we're gonna parboil the spinach.
  • Squeeze the spinach and cut into small pieces, put it in a juicer, add an appropriate amount of water, 1 teaspoon of baking soda to make spinach juice.
  • Add yeast and sugar to the flour. Pour spinach juice and knead to form a dough, cover with plastic wrap and ferment.
  • The dough is fermented twice as large. Roll the dough into long strips, divide into small doughs, roll them into thin slices, and put in an appropriate amount of red bean paste filling.
  • Make a small round cake one by one, cover with plastic wrap and wait 10 minutes.
  • Brush the pan with a little oil, add spinach round cake, and fry until golden in color.

Notes

1. You can add milk or yoghurt. Spinach and red bean pancakes are not only nutritious, but also bring a little milky fragrance.
2. Spinach should be blanched in advance. In this way, the spinach juice has no astringency, only a slight fragrance.
3. Do not cover the pan when making spinach pancakes, the pancakes are more fragrant.
