  • 5 chicken wings
  • 1 coriander
  • 2-3 tbsp ground peanuts
  • 1 tbsp chili oil
  • 1 tbsp pepper oil
  • moderate salt
  • 1 tbsp sesame oil
  • moderate green onions
  • 2 slices of ginger
  • 3 cloves garlic
  • ½ tbsp sugar
  • 1 tbsp rice vinegar
  • 2 tbsp soy sauce
  • 1 tbsp cooking wine

Instructions

  • Add water to the pan, add chicken wings, add ginger slices, green onion and cooking wine and cook for 20 minutes. Turn the chicken wings several times during cooking. When the time is up, remove the chicken wings and put them in cold water to cool, so that the chicken skin is delicate and crispier.
  • Then cut the chicken wings into small pieces with a knife and place them in a large bowl.
  • Chopped green onions, chopped parsley, minced garlic, minced ginger, and minced peanuts.
  • Put the chili oil, sesame oil, and pepper oil in a small bowl, add a few spoonfuls of chicken wings soup, then add salt, garlic, ginger, sugar, rice vinegar, light soy sauce, and mix well.
  • Pour the stirred seasoning juice on the chicken wings, add ground coriander and ground peanuts, and mix well.

Notes

The chicken wings should not be cooked too long, so that the chicken is tender, and the cooked chicken should be put into the water immediately, preferably in ice water. This makes the chicken skin delicate and crispy.
