Ingredients

  • Celtuce (Chinese lettuce)
  • 400g pork ribs
  • 3 hot peppers
  • 1 piece of ginger
  • 2 tablespoons of Sichuan bean paste
  • 1 tablespoon cooking wine
  • moderate oil

Instructions

  • Peel and wash celtuce, cut into strips, wash and cut hot peppers, and set aside.
  • Clean the ribs and put them in boiling water, then add 1 tablespoon cooking wine, blanched to remove the smell. Then take them out of the pot.
  • Put a moderate amount of oil in the pot and cook until 70% hot, Put in a piece of rotten ginger and hot peppers, scoop 2 tablespoons of Sichuan bean paste and sauté until fragrant.
  • Pour ribs and stir-fry evenly.
  • Add proper amount of water, just submerge all the ribs.
  • Pour 1 tablespoon light soy sauce. After boiling, cover the pot and simmer for 20 minutes.
  • After 20 minutes, pour the celtuce strips and continue to simmer for 5 minutes, add the appropriate amount of salt and turn off the heat.

Notes

1. Sichuan bean paste has a salty taste, it is best to put less salt.
2. Like the soft taste of celtuce. The cooking time should be delayed and adjusted according to personal taste.
