Fried Noodles with Green Beans and Pork

Ingredients

  • 250 g fresh noodles
  • 100 g pork
  • 2 slices of ginger
  • 2 cloves of garlic
  • 2 star anise
  • 2 tbsp raw soy sauce
  • One handful of green beans
  • 1/2 tbsp old soy sauce
  • 1/2 tbsp cooking wine
  • 3 dried peppers

Instructions

  • Prepare the required ingredients, using fresh noodles or handmade noodles.
  • Prepare the green beans, cut the pork into thicker pieces.
  • Cut the ginger into shreds, slice the garlic, and remove the seeds from the pepper.
  • Add oil to the pan and heat, pour the shredded pork until the color turns white, and serve the shredded pork for later use.
  • Add ginger, garlic slices, star anise and dried peppers.
  • Pour the green beans and stir-fry for 3 minutes, then pour in the fried pork, pour in the cooking wine, raw soy sauce, and old soy sauce.
  • Pour into the water, add a little salt, the amount of water is the same as the surface of the ingredients, boil the soup, and serve half a bowl of soup, which will be used in the next steps.
  • Spread the noodles evenly on the green beans, cover the pot and boil over high heat, then cook on low heat for 10 minutes, and cook the noodles with hot air. Note that the noodles are placed on the beans and should not touch the bottom of the pot.
  • After 10 minutes, mix the noodles and green beans with chopsticks, pour into the half-bowl of soup just now, and cook for a few minutes to make the noodles fully flavored.
  • When there is a little soup left, turn off the heat and serve. A plate of delicious fried noodles with green beans and pork is done.
