Prepare the required ingredients, and clean the chicken legs and shiitake mushrooms.
Cut the shiitake mushrooms into two, or three.
Cut the chicken legs into pieces as well.
Put the chicken legs in cold water, cook for 4-5 minutes after boiling, and fish out the chicken pieces.
Add water to the pot and boil. Add the shiitake mushrooms and cook until soft, fish out the shiitake mushrooms.
Pour oil to the pot and heat, and add the shallot, ginger, garlic, pepper, star anise, dried pepper. Add chicken legs and stir-fry for 2 minutes.
Pour in cooking wine and braised soy sauce.
Pour shiitake mushrooms together and stir well. Add hot water. The amount of water should be the same as the surface of the ingredients. Add white sugar, boil over high heat, turn to low heat and simmer.
When cooking has only a little soup left, add salt and serve.

To stew chicken, you need to pour in hot water. Put the salt last.
