Ingredients

  • A piece of chicken breast
  • A piece of tofu
  • 1 egg white
  • 1 TBSP sesame oil
  • 1/2 TBSP cooking wine
  • 1 TBSP starch
  • Half a piece of ginger
  • 1 TSP white pepper
  • 1 TSP chicken essence
  • Appropriate salt and scallion

Instructions

  • Prepare the required ingredients. Choose old tofu because it is not easy to crumble.
  • First cut the old tofu into large pieces, then into strips, and finally cut the tofu into small pieces.
  • Cut the chicken into pieces and put it in the mincer. Add the spring onion and ginger and stir the chicken into the meat puree.
  • Put the chicken puree in a large bowl, add half a tablespoon of cooking wine, 1 tablespoon of starch, half a teaspoon of white pepper, some salt, and then add less than half a bowl of water, stir the chicken puree and set it aside.
  • Boil the pot with water and add a little salt. Pour the tofu into the blanching water. After about 2-3 minutes, remove the tofu and set aside in clean water. Blanching tofu can remove the beaniness; Add some salt and the tofu cubes will not break easily in the soup.
  • Add proper amount of water to the pot and bring to a boil. Add ginger, bring to a boil and turn to a small fire. Put the chicken puree in the left hand, squeeze out the ball shape, the right hand with a spoon to catch and put into the pot. Or scoop out the shape of the ball directly with a small spoon and put it into the pot.
  • After the chicken balls are all put into the pot, open a high fire, cook the balls until they float, then it is cooked, skim the floating foam.
  • Add the tofu, bring to a boil and cook for 2-3 minutes. Season with salt, white pepper and chicken extract. Turn off the heat, drizzle in sesame oil, sprinkle with coriander, and a pot of chicken balls and tofu soup is ready.

Notes

Since the chicken has no fat, the meatballs will be more fragile. Add egg white and starch, the ball will not break, eating taste tender. White pepper powder and cooking wine are added to the chicken to remove the fishy smell.
