Ingredients

  • 250g beef
  • 1 tomato
  • half onion
  • a handful of greens
  • 3 tablespoons of thin soy sauce
  • 2 tablespoons of oyster sauce
  • moderate thin doughs
  • 2 teaspoons of thick soy sauce
  • 1 teaspoon of salt
  • 5 tablespoons of water
  • 1 tablespoon of cumin
  • 3 cloves of garlic
  • spring onions
  • 1 teaspoon of baking soda
  • 1 tablespoon of white pepper
  • moderate ginger

Instructions

  • Put the thin dough in a warm place until it becomes soft.
  • Wash the tomato and cut it into slices.
  • Cut the onion into shreds.
  • Wash the greens and set aside.
  • After the beef is sliced, add 1 teaspoon salt, 1 tablespoon white pepper, 1 teaspoon baking soda and 1 tablespoon ginger juice. Mix well and marinate for 15 minutes, then add 20ml of cooking oil and mix well. Cover with plastic wrap and wait for 2 to 3 hours. I usually marinate the beef at night and eat it at noon the next day.
  • Cut the thin dough into strips, and after rounding, pinch and stretch at both ends to make thick noodles.
  • Hand-pulled noodles.
  • Put the cooked noodles in cold water to prevent them from sticking together.
  • Add oil to the pot and heat, add onion and garlic and fry until fragrant. Pour the marinated beef slices and stir-fry until the color turns white. Then pour tomato slices and shredded onion.
  • Pour greens into the pot and noodles into the pot.Add soy sauce, soy sauce, oyster sauce, salt and appropriate amount of water.
  • Sprinkle with cumin powder.
