Ingredients
500g celery
100g pork
1 slice of ginger
2 cloves of garlic
1tbspsoy sauce
½tbspcooking wine
½tbspstarch
1tspwhite pepper
Instructions
Prepare pork and celery.
Chop green onion, ginger and garlic. Cut pork into shreds and place in a bowl. Add cooking wine, white pepper, starch and 1 tablespoon of oil, mix well.
Once the water’s boiling, we’re gonna parboil the celery, add a little salt, about half a minute in boiling water until the color of the celery becomes dark green, take it out of the pot.
After the celery is removed from the pot, quickly put it in cold water to cool it, so the color will not turn yellow.
Add oil to the pot and heat, pour chopped green onion, shredded ginger and garlic until fragrant. Then add the shredded pork and stir-fry until the color turns white.
Pour celery, then add salt and soy sauce, stir quickly and evenly over high heat, turn off the heat.
Notes
To scald celery briefly can remove part of the strong smell. Adding a little salt to the water will make the celery greener. Put it in cold water and let it cool, the color of celery will not turn yellow.
