Ingredients

  • 2 potatoes
  • 250g celery
  • green onion
  • 2 cloves of garlic

Instructions

  • Prepare the ingredients, peel and wash the potatoes.
  • Cut the potatoes into slices first, and then cut them into shreds. Wash the sliced potato shreds in clean water, wash away the starch on the surface of the shredded potatoes.
  • Cut celery.
  • Add water to the pot and boil, add a little salt, pour celery and cook until the color becomes dark green, remove the celery from the pot and set aside.
  • After celery is boiled, put it in cold water and cool it to keep the celery crisp and tender.
  • Add oil to the pot and heat, add green onion, half of the minced garlic, fry until fragrant, then add potato shreds and stir-fry until it becomes soft over high heat.
  • Pour celery, add salt and other half of minced garlic, stir quickly on high heat, then turn off the fire.

Notes

Pour the shredded potato into clean water to wash off the starch on the surface, or soak in the water for half an hour. In this way, the color of the potato shreds will not be oxidized and blackened, and it will not stick to the pan when frying.
