Ingredients

  • 1 tbsp soy sauce
  • ½ tbsp cooking wine
  • 500 g eggplant
  • 2-3 green chili peppers
  • 100 g pork
  • 1 slice ginger
  • 2 cloves garlic

Instructions

  • Cut the eggplant into shreds, add a little salt and mix well, marinate for 10 minutes. 
  • Green chili peppers cut into strips. Minced pork. Chopped green onion, ginger and garlic.
  • Add oil to the pan and heat it, pour the marinated eggplant and stir-fry until it becomes soft and set aside.
  • Add a little oil to the pot, pour chopped green onion and minced ginger, then pour minced meat and stir-fry until the color turns white.
  • Pour soy sauce and cooking wine and stir-fry evenly, cooking wine can remove the fishy smell of pork.
  • Pour the freshly fried eggplant, then pour green chili peppers, add a little salt, pour a little water and cook for 1-2 minutes.
