  • 2 pounds (0.91 kg) beef brisket
  • moderate oil and salt
  • 2 tbsp Sichuan bean paste
  • 1 piece of ginger
  • 10 peppercorns
  • 1 star anise
  • 3 bay leaves
  • 1 piece of cinnamon
  • 3 dried chili peppers
  • 1 tbsp Cooking wine
  • 1 tbsp light soy sauce
  • ½ tbsp teriyaki soy sauce
  • ½ tbsp sugar
  • 2 tbsp ground green onions

Instructions

  • Soak the beef in water for about 2 hours, and change the water 1-2 times halfway. The advantage of this is that the beef has no fishy smell and the color of the beef does not turn black.
  • Add water and beef to the pot, bring to a boil, skim off the froth, then cook for another 3-4 minutes and set aside.
  • Add oil to the pot, add Sichuan bean paste, ginger slices, bay leaves, dried chili, cinnamon, peppercorns, star anise, and stir-fry for a while.
  • Stir-fry beef pieces evenly, pour cooking wine.
  • Pour hot water, light soy sauce, teriyaki soy sauce and sugar, stew for 1 hour.
  • When the time is up, add salt and sprinkle green onions.

Notes

Beef should be soaked in clean water before cooking. Blanching the beef in advance can remove the blood.
