Ingredients

  • 250g pea pods
  • moderate black fungus
  • moderate oil
  • moderate salt
  • 2 cloves of garlic
  • 1 teaspoon of chicken essenc
  • moderate water starch

Instructions

  • If you are buying dried black fungus, you need to soak the hair in advance, soak it in cold water for 3 to 4 hours, let the black fungus slowly absorb moisture, and restore it to the translucent state of fresh fungus. Prepare the pea pods and carrots at the same time.
  • After the fungus has been soaked, tear the black fungus into pieces by hand and cut the carrot into slices. Minced garlic.
  • Once the water’s boiling, we’re gonna parboil the pea pods, add a little salt, blanch the pea pods until the color becomes dark green.
  • Take pea pods out of the pot, quickly put it in cold water to cool and set aside.
  • Re-boil water, pour black fungus into the pot and cook for about 1 minute, then take them out of the pot and set aside.
  • Add oil to the pot and heat, add garlic and fry until fragrant.
  • Pour carrot slices and stir-fry until the color becomes dark red.
  • Add fungus and pea pods and fry for about 1 minute. Add chicken essence, pour in moderate water starch and stir-fry over high heat.

Notes

Adding a little salt to the water will make the pea pods greener. Put it in cold water to cool, it can keep the pea pods crisp and tender, and the color will not turn yellow.
